The @ScratchDesignStudio account is not having any updates in “What I've been doing” though they are hosting a studio every month?

the account you linked became a curator of the studio, and a manger, but they weren't there from the start.
ScratchDesignStudio creates the studios, which, as mentioned before, isn't added to the activity. Since they already start as manager (and host), no more activity goes in that section
