If the MC Wiki article that I read a year ago is still correct, mobs that “have damaged or been damaged by another entity” cannot despawn. Therefore, you can probably just snowball the zombie or whatever mob runs the mob farm & it won't despawn.

…actually, that's not the case. However, you can still prevent the mob from despawning by giving it an item.
